The true king of the table is the Gran Bollito Misto di Carrù, which can be enjoyed here all year round: the scaramella, the brisket, the shank, the head, the tongue, the priest's hat, the cotechino, the chicken, the tail knots... a tradition that has been handed down for centuries, still proposed today to whet the palate.
The boiled meat is accompanied by tasty sauces such as green sauce, cougnà, horseradish, homemade mustard, red sauce, and rennet apple mustard.
The Antica Finanziera Reale and the Piedmontese mixed fried food are also traditional dishes, available to enthusiasts. The meal ends with a tasting of "Dop della Granda" cheeses (fresh and matured toma, Bra duro, Castemagno and other typical dairy products from the Cuneo area.
For those with a sweet tooth, bunet (traditional pudding made with eggs, chocolate and amaretti), the very delicate Cream cremino and hazelnut cake with zabajone will be a real joy for the palate.
