From appetizers to traditional Piedmontese first courses

It starts with a good slice of cooked and raw salami prepared exclusively for Il Vascello d'Oro accompanied by an artisanal focaccia.

We continue with the raw Carrù meat (of Piedmontese breed), which in season is accompanied by a grating of Alba White Truffle. There is no shortage of vegetables with bagna caòda, homemade Russian salad, tongue in green sauce...

Among the first courses you will always find the famous tajarin, homemade egg pasta, perfect with a homemade ragù or with butter and sage.

The great tradition of Piedmontese stuffed pasta introduces another must-have in the cuisine of the Vascello d'Oro: the hand-prepared stuffed agnolotti, stuffed with a mixture of meats and vegetables.

The proposal of chef Beppe Cravero and his staff may vary from season to season, based on the local raw materials available. However, there are some solid, timeless items that can be enjoyed all year round.

Where to eat mixed bollito?

The true king of the table is the Gran Bollito Misto di Carrù, which can be enjoyed here all year round: the scaramella, the brisket, the shank, the head, the tongue, the priest's hat, the cotechino, the chicken, the tail knots... a tradition that has been handed down for centuries, still proposed today to whet the palate.

The boiled meat is accompanied by tasty sauces such as green sauce, cougnà, horseradish, homemade mustard, red sauce, and rennet apple mustard.

The Antica Finanziera Reale and the Piedmontese mixed fried food are also traditional dishes, available to enthusiasts. The meal ends with a tasting of "Dop della Granda" cheeses (fresh and matured toma, Bra duro, Castemagno and other typical dairy products from the Cuneo area.

For those with a sweet tooth, bunet (traditional pudding made with eggs, chocolate and amaretti), the very delicate Cream cremino and hazelnut cake with zabajone will be a real joy for the palate.

The AUDI Food and Wine Circuit curated by Dr. Giovanni Bravi with a preface by Edoardo Raspelli, which includes the best Italian restaurants, rated the Golden Vascello with 4 forks (out of a maximum of 5) defining it as "Elegant, classy, ​​excellent cuisine".
